In a bowl, combine pork with garlic, Italian seasoning and hot pepper flakes; set aside.
In a large non-stick skillet, heat oil over medium heat and cook onion and pepper for about 3 minutes or until softened. Add pork mixture and salt; cook, breaking up with spatula for about 6 minutes or until no longer pink.
Stir in tomato sauce and barbecue sauce and bring to a simmer. Simmer, stirring often for about 8 minutes or until thickened slightly.
Place bottom halves of buns onto plates and top with sloppy joe mixture. Sprinkle with cheese, if using. Sandwich with top bun to serve.
