Sprinkle pork chops all over with salt, pepper and thyme.
In a large skillet, heat oil and butter over medium-high heat. Brown chops on both sides and remove to a plate.
Add apples and shallots and sauté for about 3 minutes or until starting to brown. Reduce heat to medium. Sprinkle brown sugar and cinnamon all over apple mixture. Add apple cider and bring to a simmer.
Return pork chops to pan and turn to coat with sauce. Simmer gently for about 8 minutes or until sauce is reduced slightly and meat thermometer registers 155ºF (68ºC) when tested.
Tip: Apple Cider with or without alcohol can be used in this recipe.
